Ingredients for ayam percik recipe

  • 4 whole large chicken legs
  • 5 bruised lemongrass
  • 5 tablespoons vegetable oil
  • 1 1/4 cup water
  • 2 1/2 teaspoons tamarind pulp
  • 1 1/4 cup thick coconut milk
  • 1 tablespoons sugar
  • pinch of salt

Marinade for ayam percik recipe

  • 1 1/4 tablespoon sugar
  • 3/4 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon powder
  • 3/4 teaspoon turmeric powder

Spice paste for ayam percik recipe

  • 5 cloves garlic
  • 10 dried chilies
  • 5 candlenuts
  • 2 red chilies
  • 2  1/2 cm ginger
  • 6 shallots

How to make Ayam Percik

  • add the ingredients for marinade and chicken into a large bowl
  • mix evenly and marinate chicken for one-and-a-half hour
  • cut the ingredients for spice paste into small pieces and put into a food processor
  • blend until you obtained a smooth spice paste
  • add vegetable oil into a skillet
  • heat oil
  • add lemongrass, spice paste and tamarind pulp into skillet
  • fry for four minutes
  • add water and cook for four minutes
  • put in the coconut milk, sugar and salt
  • simmer under medium heat for four minutes

  • grill the ayam percik over a low charcoal fire
