Ingredients for nasi lemak recipe

  • coconut milk steamed rice
  • sambal ikan bilis
  • 1 thinly sliced cucumber for garnishing
  • 150 g crispy dried anchovies for garnishing
  • 100 g roasted peanuts for garnishing
  • 4 quartered hard boiled eggs for garnishing

 

Ingredients for coconut milk steamed rice recipe

  • 360 g rice
  • 580 ml water
  • 1 1/2 slice ginger
  • 2 1/2 finely chopped shallots
  • 11 teaspoons thick coconut milk
  • 3 screwpine leaves (pandan leaves), tied into knots
  • a pinch of sugar
  • a pinch of salt

 

How to cook coconut milk steamed rice

  • wash rice with running water
  • add rice, thick coconut milk and water into a pot
  • also put in the screwpine leaves (to give out a sweet perfumy aroma), ginger and shallots
  • add in a pinch of sugar and salt
  • bring water to boil
  • adjust to low temperature and simmer for ten minutes
  • use a wooden ladle to loosen rice grains
  • adjust temperature to the lowest
  • cover pot as per the resipi nasi lemak
  • steam rice for ten minutes
  • when rice is cooked, fluff rice with fork

 

Ingredients to make sambal ikan bilis recipe

  • 120 g dried anchovies (ikan bilis)
  • 2 1/2 teaspoons tamarind pulp with 100 ml hot water (to get tamarind paste)
  • 110 ml vegetable oil
  • 1 sliced large-sized red onion
  • a pinch of sugar
  • a pinch of salt
  • 3 cloves garlic
  • 5 1/2 shallots
  • 1 1/2 sliced into rounds medium-sized onion
  • 5 tablespoons chili paste
  • 1 1/4 teaspoon shrimp paste (belacan)

 

How to cook sambal ikan bilis

  • put shrimp paste, garlic, chili paste, shallots and sliced round onions into a food blender
  • blend well to obtain ground paste
  • put vegetable oil into a wok
  • heat vegetable oil
  • put in the dried anchovies and fry until crispy
  • remove and drain the crispy anchovies on absorbent towels
  • leave only 2 tablespoons of the vegetable oil in the wok
  • put in the ground paste
  • saute the ground paste as per the nasi lemak recipe
  • put in sugar, tamarind paste, red onions and salt
  • cook until sambal ikan bilis gravy thickens
  • put in the crispy anchovies when making this sambal nasi lemak
  • mix well
  • remove and put sambal ikan bilis in a bowl
