Sambal Tumis Recipe

The sambal tumis recipe or resipi sambal tumis showcases chilies which is fried with dried shrimp paste (belacan), garlic, onion and tamarind juice. The Malay word ‘sambal’ usually means a condiment, ingredient or a dish that contain a huge amount of chilies while ‘tumis’ simply means to fry until you get an aroma.

Ingredients for sambal tumis recipe

  • 75 g dried chilies
  • 3 medium-sized onions
  • 1 3/4 tablespoon vegetable oil
  • 1 3/4 tablespoons sugar
  • 2 1/4 tablespoons toasted and grounded dried shrimp paste
  • 12 cloves garlic
  • 1 1/4 tablespoon tamarind juice
  • water
  • salt

How to make sambal tumis

  • soak tamarind paste (asam jawa) in 120 ml water to obtain tamarind juice
  • soak the dried chilies in water for twenty minutes
  • chop two onions coarsely and one onion finely
  • drain the chilies
  • add chilies, coarsely chopped onion and peeled garlic into a blender
  • blend to obtain a smooth chili paste
  • heat vegetable oil in a wok
  • saute the finely chopped onions with salt
  • add the smooth chili paste and continue to fry
  • put in the grounded dried shrimp paste, salt, sugar and tamarind juice
  • mix well and simmer for fifty minutes
  • if the sambal tumis is too thick, add in a little more water
