Ingredients
1 small pumpkin
3 small-sized onions, chopped finely
220g Arborio rice
1 litre hot low-sodium chicken stock
20g freshly grated Parmesan cheese
1 1/2 teaspoon olive oil
2 garlic cloves, crushed
small glass of white wine
Parmesan shavings, for garnishing

Method:
Cut pumpkin into bite-sized.
Heat the olive oil in a large heavy-based saucepan. Put in the onion, pumpkin and garlic and fry until the onion becomes soft.
Put the rice to the pan and carry on cooking for 2 1/2 minutes. Mix evenly.
Add wine to the rice and pumpkin mixture, and then add the chicken stock a small amount at a time. Stir continuously. Allow the stock to be soaked up before adding more. Follow this procedure until rice is cooked.
Stir in the Parmesan cheese and garnish with Parmesan shavings.
You now serve the low sodium and healthy pumpkin risotto.

2. Low Sodium Spaghetti With Aubergine Recipe

Ingredients:
200g spaghetti
1/2 large-sized aubergine, chopped
1 low salt vegetable stock cube
1 tin chopped tomatoes
2 tablespoon tomato puree
2 1/4 tablespoons olive oil
2 small sized onion, chopped
2 garlic clove, chopped

Method:
Heat the olive oil in a saucepan. Put in the chopped garlic and onion. Cook them over a medium heat for 2 minutes. Make sure the onion becomes soft.
Add in the chopped aubergine. Make sure that the aubergine is coated in the oil. Then drop in the puree, chopped tomato and garlic and put in the stock cube. Simmer for 10 minutes.
Cook the spaghetti.
Serve this healthy low sodium spaghetti with aubergine with sauce mixed through the spaghetti.
