  • 550 g cooked chicken meat cut into bite-sized

  • 2 1/2 ripe small-sized avocados

  • 1 1/2 tablespoons chopped parsley

  • 1 1/4 chopped green onions

  • 45 g toasted cashew nuts

  • 3 teaspoons lime juice

  • 3 skinned large-sized tomatoes

  • parsley for garnishing

Ingredients for Garlic Vinaigrette to be added to chicken avocado salad recipe

  • 3/4 tablespoon white wine vinegar

  • 3/4 teaspoon Dijon mustard

  • 4 tablespoon groundnut oil

  • 1 teaspoon caster sugar

  • 1 1/2 minced clove garlic

  • pinch of freshly ground black pepper

  • salt to taste

  • cut the avocado into two pieces

  • discard the stone and skin
