Whole spices

4 cloves

3 green bruised cardamom pods

3 cinnamon sticks about 3 cm in length

How to make Braised Lamb Leg
-
allow deep slashes in lamb to allow spices to go through
-
mix marinade ingredients and rub into lamb
-
marinade for four hours
-
mix masala ingredients and blend to produce paste

heat oil in cooking pan
-
saute the whole spices ingredients for three minutes

add ground masala
-
saute until the oil separates

add tomato paste and salt

heat and put into lamb leg
