  • 2 tablespoons chopped coriander leaf

  • 2 1/2 tablespoon coarsely chopped fresh spring onion

  • 1/2 teaspoon salt

  • 1/2 teaspoon white pepper powder

  • 1 1/2 tablespoon skinned and chopped pistachio nuts

  • pinch of saffron threads, soaked in warm milk

  • 1 egg beaten with 2 teaspoon of water

Ingredients for the pastry of fish pate

  • 450 g plain white flour

  • 200 g butter or ghee

  • 1 1/2 tablespoons iced water

  • 3 1/2 tablespoons oil

  • 1/2 teaspoon salt

How to make Fish Pate In Pastry

  • combine all the fish pate ingredients but exclude the egg wash, pistachios and saffron

  • process the above ingredients for fish pate in a blender

  • stir in the pistachios and saffron together with the soaking liquid

  • mix evenly and chill the fish pate for one hour in the refrigerator

  • make a dough by mixing all the pastry ingredients

  • roll the dough out to a thickness of 20 mm

  • mould the fish pate mixture into the shape of a cylinder

  • place the fish pate on the centre of the pastry

  • wrap the pastry around to enclose the fish

  • brush the egg wash on all sides of the pastry

  • decorate the top with trimmings of dough

  • apply egg wash on trimmings

  • bake in oven over medium temperature for half-an-hour

  • allow to cool, then chill in the refrigerator

  • cut into thin slices

  • serve the fish pate in pastry with mint and coriander chutney and lemon wedges

  • you can choose to serve this Indian fish pate recipe with a salad
