  • 600 g one whole piece pork with fat and skin

  • 200 g one piece pig's liver

  • 1 3/4 teaspoons chili powder

  • 1/4 tablespoon turmeric powder

  • 1 teaspoon cinnamon powder

  • 10 black peppercorns

  • 8 cloves

  • 5 green cardamon pods

  • 1 cup vinegar

  • 6 cloves garlic

  • 3 chopped small-sized onions

  • 1 chopped large-sized tomatoes

  • 1 1/2 teaspoon sugar

  • 4 teaspoons brandy or feni (a type liquor made from cashews)

  • 1/2 teaspoon salt

How to make Goan Sorpotel / How to make Sarapatel

  • boil pork meat for 20 minutes

  • boil liver for twenty minutes

  • remove and reserve liquids

  • cut pork meat and liver into bite-sized pieces

  • fry the meat mixture from above in a pan until brown in color

  • do not add oil as the lard from the fat pork should be enough to cook the meat mixture

  • drain and set aside the meat mixture

  • keep lard in the pan

  • make a thick paste by grinding the cardamoms, cinnamon, cloves, pepper and turmeric powder

  • add vinegar when grinding the above spice paste

  • in the leftover lard in the pan, fry the garlic and onions until brown

  • add tomatoes and cook until the tomatoes become pulpy

  • add the spice paste and cook for six minutes

  • add the reserved liquids from the meat and liver and put in the bite-sized fried pork meat and liver

  • simmer for twenty minutes

  • add sugar, brandy or feni

  • add a cup of vinegar

  • simmer until the Goan soropotel is tender

  • the meat will taste better if you keep this Goan cuisine in the refrigerator for two days
