  • 300 g boneless lamb mutton

  • 6 cloves

  • 7 cm cinnamon stick

  • 3 black bruised cardamom pods

  • 5 green bruised cardamom pods

  • 5 green chilies

  • 1 large-sized sliced onion

  • 3/4 teaspoon salt

  • 500g long-grained rice, soaked one hour and drained

  • 3 green bruised cardamom pods

  • 4 cloves

  • 2 cm cinnamon stick

  • 2 bay leaves

  • 1 blade of mace

  • 4 drops of rose essence

  • 1 cup hung yogurt

  • 2 1/4 lemons, squeezed into juice

  • 1 1/2 teaspoons crushed ginger

  • 1/2 tablespoon crushed garlic

  • 1 teaspoon garam masala

  • 1 1/2 teaspoon coriander powder

  • 1 1/2 teaspoon chili powder

  • 1/2 teaspoon turmeric powder

  • 3/4 cup mint leaves

  • 3/4 cup coriander leaves

How to make Mutton Biryani

  • cut the boneless lamb mutton into 3 1/2 cm meat cubes

  • chop the lamb with bone portion into 3 1/2 cm pieces

  • slit the chilies lengthwise

  • mix all marinade ingredients and add the mutton meat

  • mix well and leave the mutton to marinate for three hours

  • put seasonings and spices into a cooking pan filled with water

  • bring the water to boil

  • add rice and boil for four minutes
