500 g boneless lamb cut into bite-size

2 1/2 tablespoons oil

4 green bruised cardamom pods

1/4 teaspoon black peppercorns

7 sliced shallots

coriander leaves

3/4 cup water

1/4 tablespoon salt
Masala for lamb Kerala curry

3 chopped onions
-
2 cm chopped ginger
-
4-6 chopped cloves garlic
-
1/2 teaspoon turmeric powder

2 chopped ripe tomatoes

4-6 dried, broken and soaked to soften chilies

2 green chopped chilies

6 green cardamom pods

1 teaspoon black mustard seeds

1/2 teaspoon black peppercorns
How to make Kerala Lamb Curry
-
obtain paste by blending the masala ingredients
-
keep aside the masala paste
-
fry green cardamoms and peppercorns for three minutes in hot oil

add shallots and saute until the color changes to golden brown
-
put in the lamb meat and saute until the color changes to brown
-
add the masala to the lamb Kerala curry
-
saute on low heat for fifteen minutes

add salt and water
-
cover the cooking pan and cook gently until the lamb meat is tender

use the coriander leaves to garnish the kerala curry for lamb
