Recipe to make Kulfil

 

Indian Ice Cream recipe is one of the most famous Indian dessert recipes which is also known as kulfi recipe. Indian ice cream recipes or kulfi recipes usually make full use of various spices to give the ice cream a delicate flavor. Kulfi ice cream is one of the most famous frozen Indian dessert made from milk that takes a considerable amount of time to melt. Besides pistachio kulfi, the different types of kulfi that are popular include the cardamom kulfi, malai kulfi and mango kulfi. The recipe kulfi below used pistachios to give the kulfi ice cream a wonderful taste.

Ingredients for Indian kulfi recipe

  • 2 1/4 litres full-fat milk

  • 130 g sugar

  • 2 tablespoons skinned and chopped pistachio nuts

Falooda for kulfi ice cream

  • 220 g corn flour

  • 4 1/4 cups water

How to make Kulfi Ice Cream

  • there are two main steps when preparing Indian ice cream

  • make the ice cream first

  • pour milk into a wide and heavy pan

  • cook the milk over very low temperature

  • stir evenly until milk become thick and reduced to two cups

  • stir the sides of the pan constantly to avoid the milk from burning

  • add sugar and pistachio nuts

  • allow the mixture to cool

  • freeze the mixture in individual containers or moulds

  • after making the ice cream, make the falooda

  • dissolve the corn flour in one cup of water

  • heat the remaining water in a pan

  • add the blended corn flour and cook to make a thick jell

  • while it is still hot, put the mixture into a press capable of making fine threads

  • totally fill up a bowl with cold water

  • set the press over the water

  • when the falooda goes through the press, it will touch the water

  • push all the jell through the press as per the kulfi recipe

  • store the falooda in water until needed

  • drain when you are ready to serve the ice cream

  • unmould the kulfi ice cream from the moulds

  • if you are making mango kulfi, replace the pistachio nuts with mango

  • serve the Indian kulfi dessert with the falooda as garnish
