Recipe to cook mild chicken curry

 

Mild Chicken Curry is known as Murgh Korma. Ingredients for mild curry chicken recipe

  • 800 g boneless chicken

  • 1 chopped large onion

  • 6 1/2 cloves of chopped garlic

  • 3 1/2 cm of chopped ginger

  • 100 g butter or ghee

  • 3 1/2 green bruised cardamom pods

  • 3/4 black bruised cardamom pod

  • 3 cm piece cinnamon

  • 3 bay leaves

  • 7/8 cup whipped yogurt

  • 1/2 teaspoon freshly grated nutmeg

  • 1 1/4 teaspoons white pepper powder

  • 3/4 teaspoon salt

  • 2 tablespoons cream

  • 3/4 teaspoons garam masala

  • 1/2 tablespoon chopped coriander leaves for garnishing

Nut Paste for chicken korma

  • 2 1/2 tablespoons white poppy seeds, soaked and simmered for at least half-an-hour

  • 3 tablespoons unsalted melon seeds, soaked

  • 3 1/4 tablespoons chironji nuts or blanched almonds

  • 2 1/2 tablespoons raw cashew nuts, soaked

How to make Mild Chicken Curry

  • set aside chicken pieces that has been cut into bite-sized pieces

  • blend the onions, garlic and ginger together to produce a paste

  • set aside the above paste mixture

  • Use enough water to blend the nut paste ingredients

  • set aside the above paste mixture

  • ghee is then heated

  • saute the cardamom, cinnamon and bay leaves for three minutes

  • add the blended onion paste to the above

  • saute the above mixture over very low heat and stir regularly

  • make sure the oil is separated and the mixture do not change color

  • add yogurt and continue to cook for twenty minutes

  • stir regularly when cooking this chicken korma

  • add nutmeg, pepper and chicken and then simmer over low heat for twenty minutes

  • make sure the chicken is tender when cooking chicken korma or chicken kurma

  • add the nut paste and simmer gently for four minutes

  • add 1 tablespoon of the cream, salt and half the garam masalah

  • stir properly as per the chicken korma recipe

  • remove from the heat

  • serve the mild curry chicken garnished with the left-over cram, chopped coriander and garam masalah
