Sujeonggwa Recipe

A refreshing Korean drink has to be the persimmon tea. Use this easy persimmon tea recipe or sujeonggwa recipe to make one of the best Korean sweet drink to complete your afternoon lunch.

Ingredients for persimmon tea recipe

  • 8 dried persimmons

  • 1 cinnamon stick measuring about 8 cm

  • 6 dried red dates

  • 3 1/4 tablespoons sugar

  • 12 pine nuts

  • 3 black peppercorns

  • 1 1/4 liters of water

  • 1 1/2 thinly sliced ginger measuring 3 cm

How to make Persimmon Tea

  • add the black peppercorns, cinnamon stick, dried red dates, ginger and water into a pot

  • bring to a boil

  • cover the pot and lower the temperature

  • simmer for one hour

  • put in the sugar

  • stir until the sugar is dissolved

  • soak persimmon in water for one hour and the drained

  • put in four dried persimmon into the pot

  • allow the persimmon tea to cool

  • put in the fridge

  • to serve, pour the persimmon tea into four glasses

  • put in some pine nuts

  • add in a whole dried persimmon to each glass

  • persimmon tea is best serve chilled
