Recipe to cook squid sushi

 

Squid Sushi recipe, which is known as Ika-Zushi recipe in Japan, is a great Japanese sushi cuisine and the most important part when learning how to make squid sushi is that you must know how to choose squid because a squid that is bright eyed and has a firm texture and a slight smell of iodine produces the best ika-zushi.

Ingredients for squid sushi recipe

  • 1 medium-sized squid (buy squid that is already cleaned)

  • 1 tablespoon fresh peas

  • 1 small-sized egg

  • 50 g vinegared rice

  • pinch of salt

  • wasabi

  • soy sauce

Ingredients for awasezu (vinegar mix)

  • 4 tablespoons rice vinegar

  • 1 1/2 tablespoons sugar

  • large pinch of salt

How to make Squid Sushi

  • add the ingredients for the vinegar mix in a mixing bowl

  • add water and salt into a saucepan

  • bring to a boil

  • put the squid (body and tentacles) into the saucepan

  • remove squid when you see the tentacles start to curl or when the squid changes color

  • remove and drain with absorbent towel

  • immediately soak squid in the vinegar mix

  • let it marinade while preparing for the filling

  • mix egg with chopsticks

  • pour egg into a pre-heated skillet

  • turn skillet to coat with a thin layer of egg

  • remove once egg is cooked and slice egg into thin strips

  • cook fresh peas in boiling water as per the squid sushi recipe

  • remove squid from vinegar mix as per the squid sushi recipe

  • cut the tentacles into small pieces as per the recipe for squid sushi

  • transfer the small pieces of tantacles, egg strips, pea and rice into a bowl

  • toss slowly as per the ika-zushi recipe

  • stuff the rice mixture into the body of the squid

  • allow the squid sushi to rest for two hours in a cool place

  • cut squid into five or six even-sized pieces

  • serve squid sushi with soy sauce and wasabi
