  • 1.1 kg whole fish

  • 5 cups vegetable oil

  • 3 cloves chopped garlic

  • 25 g dried Chinese black mushrooms

  • 5 teaspoons shredded ginger

  • 1/4 cup thinly sliced shallots

  • 1 1/2 tablespoons brown sugar

  • 4 red chili peppers

  • 1 1/4 tablespoon yellow bean sauce

  • 1 1/4 tablespoon oyster sauce

  • 1 tablespoon cornstarch

  • 3 green medium-sized onions, cut into 4 1/2 cm lengths

  • 4 tablespoons rice flour

  • 2 cups chopped cabbage

  • 3/4 cup cold water

  • red chili peppers and Chinese parsley sprigs for garnishing

  • salt to taste

How to make Deep Fried Fish With Ginger And Yellow Bean Sauce

  • wash fish with tap water

  • make a cross-hatch pattern about 1 cm on both sides of the fish to prepare to deep fry fish

  • cut halfway to the bone of the fish
