  • 700 g mussels without shells

  • 14 medium-sized red chili peppers

  • 1/4 cup vegetable oil

  • 5 cloves finely chopped garlic

  • 3 finely chopped shallots

  • 3 teaspoons yellow bean sauce

  • 4 teaspoons cornstarch

  • 1/2 cup cold water

  • Chinese parsley sprigs

  • salt to taste

  • wash mussels with cold running water

  • pat dry the mussels with absorbent paper

  • heat oil in wok

  • put in garlic and shallots

  • fry until you can see light brown color

  • put in mussels, red chili peppers and yellow bean sauce

  • mix cornstarch and cold water
