550 g beef brisket

1 1/4 kg beef bones

200 g thinly sliced raw beef sirloin

2 1/3 liters water

220 g dried string-like rice noodles

1 1/2 peeled and bruised small-sized onion

1 1/2 sliced small-sized onion

1 whole 12 cm rinsed and bruised fresh ginger root
-
1 cinnamon stick 6 cm in length
-
4 star anise pods
-
1 1/4 tablespoons fish sauce
-
1/4 tablespoon sugar
-
3/4 teaspoon ground white pepper
-
60 g bean sprouts, remove the tops and tails
-
30 g minced saw-leaf herb leaves (ngo gai) for garnishing
-
1 1/2 sliced scallion for garnishing
-
bottled chili sauce, to serve
-
yellow bean sauce, to serve
-
ground white pepper
-
pinch of salt
-
rinse the beef bones and beef brisket under running water
-
dry with absorbent paper
-
grill ginger and onion in frying pan for five minutes
-
remove and set aside as per the beef soup noodles
-
boil water in a pot under high temperature
-
add beef bones and beef brisket
-
skim off any foam that floats to the top
-
add grilled ginger and onion together with cinnamon, salt and star anise
-
lower heat and boil with medium temperature
-
simmer for seventy minutes or until beef is tender
-
remove pot from the heat
-
take out beef from stock as shown in this pho recipe
-
cut beef into thin slices and set aside
-
strain the stock and add the clear soup back to the pot
-
season the clear soup with fish sauce, salt, sugar and pepper
-
keep soup hot under low temperature as per the pho recipe
-
boil water in a separate pot
-
put in rice noodles and cook rice noodles until soft, say for six minutes
-
remove, rinse with running tap water and then drain
-
put the cooked rice noodles into serving bowls before you can serve the beef noodle soup
-
top with bean sprouts, onions and beef slices
-
add in the cooked beef slices and the raw beef slices into the pho bo
-
pour in the hot beef soup as per the Vietnamese beef noodle soup recipe
-
sprinkle the Vietnamese beef soup noodle with pepper
-
add scallions and saw-leaf herb leaves for garnishing
-
serve the Pho Bo beef soup with noodle with limes, mint leaves, red chilies and saw-leaf herb leaves
-
you can also serve pho soup with cilantro (coriander leaves)
